I don't like much in the way of seasoning. By the OP's own example, saying that it's good chicken when it's not seasoned means that the chicken is good. If good chicken involves seasoning it, then it's not so much the chicken that's good as it is the seasoning. In either case, I prefer somewhat bland-tasting food. I'm put off by too much flavor.

I love my wife. But she doesn't understand this and it's a constant battle. Her mother didn't season her food either. I grew up with lots of different flavors so bland food repulses me. LMAO one time I was making tacos, which I had done a million times, and she came out as I was putting some chili sauce into the meat. She accused me of poisoning her mother with spices... led to a crazy screaming match. I love spice but I like to cook with all sorts of seasonings, I make a delicious rosemary lamb for instance, and my mushroom roast beef with red wine gravy is legit... fuck eating bland shit.

I use pepper for days but never put salt on anything. There's usually enough hot sauce in or around whatever I cook that there's really no point in other seasonings anyway so even the pepper is kind of a waste. I don't cook for other people though, it would be a sin

You gotta be careful about putting salt on before cooking. Putting salt on will pull the moisture out when you're cooking, drying out your meat.

Use olive oil, garlic powder, pepper. Put the salt on near the end of the cooking. With things like burgers I use cajin spice.

For the love of god, I'm tired of going to functions or even people bringing food into work and it's not seasoned! Then you have people walking out like "Man, that chicken was really good!" Like, no, it wasn't! How hard is it for people to season their food? Just take some salt and pepper (the bare minimum) and throw a lot on there until it's covered in seasoning. If you think you might oversalt it, grab Kosher salt, instead. You can throw more salt on there than regular salt without risk of it being over-seasoned. And no, seasoning after you've cooked it isn't the same as seasoning before cooking.

Anyway, ERA what are your favorite seasonings? I'll go first:

Chicken Thighs:
- Adobo
- Kosher Salt
- Pepper
- Garlic powder

Most Steak:
- Kosher Salt
- Pepper

Chuck steak:
- Kosher Salt
- Pepper
- Garlic powder
- Bay leaves

Ribs:
- Kosher Salt
- Pepper
- Mustard (for adhesion)
- Rib Rub

All that stuff is good but if you have to rely on seasoning then you're buying some low quality food. Salt is the only seasoning that most of those foods need.

I'm faxt, anything other than salt on chuck steak is taking away from the natural flavors, which salt helps release.

Salt only is boring food. Seasoning brings variety and it complements & enhances different dishes to be better than the basic ingredients alone would be.

Of course seasoning isn't needed ALL of the time but you have to be a particularly boring chef if you mostly only use salt (and pepper). There is a world of flavors out there and limiting yourself to salt is just limiting all kinds of awesome food experiences one could have.

What if I like my food unseasoned, OP? WHAT THEN?

I don't trust myself with seasoning, nor do I enjoy wasting time adding seasoning to perfectly edible food.

So either I'm served food that's already been seasoned by someone who know what they're doing, or I'll have my food as it is. Raw, unseasoned salad. Unseasoned chicken. Whatever. Food does have a taste even when unseasoned.

Sounds to me like you have gradually weakened your taste buds over a long period of time, which means anything that isn't covered in seasoning now tastes bland to you. The people who enjoy unseasoned food likely haven't damaged their taste buds, in comparison. For health reasons (blood pressure, for the most part), you might want to consider gradually reducing the amount of salt you use on your food until you get used to normal levels again. It might take a while.

This isn't unique to taste. Take bass levels in music, for example. People who always turn up the bass in music struggle to enjoy music with regular audio balance and have to gradually get used to it again.

Of course other seasonings have there place, but you don't have to put something other then salt in your food. Salt is the only essential seasoning, and should be treated like the base seasoning it is. Everything else is secondary, and should be treated like additional ingredients.

Please, please, please use whole black pepper and grind instead of that preground stuff. And remember to change it every once in a while.
You lose so much flavor with the powder. It's almost a crime.

Yeah, I have very simple taste and I'm a bad cook but to actively fight against seasoning is bizarre

I've recently been throwing either soy sauce or paprika and garlic on everything.

Everything cooked in my household is seasoned though. Salt, turmeric, and cumin is like the bare minimum for any meats.

Yah you'll see it all on ERA and previously that other place we don't talk about. Columbus and the boys literally set sail looking for spices and ended up colonizing the new world, they knew what was up.

I had a friend in high school that had never had seasoned meat until she turned 16 and got some at her boyfriend's house. Her parents would only occasionally use beer and said that the meat had it's own flavor already lol.

It isn't bad per se, but it is a half measure, kinda like using Pinchos seasoning

Adobo is for of marinating, at least here in spain, and the result is delicious but using a mix of spices that maybe fakes the taste is not good enough

You should try many more mixes, even done by yourself. I love mixing garlick, chilli (not powder, chopped), black pepper and oregano, now, the downside is that until you get used you're going to be shitting fire for a while.

Good seasoning is a must but you can easily put too much as well. Seasoning is there to enhance the taste, not to totally overpower the taste of the meat.

Also some people are allergic to different spices.

This topic is reminding me why I hate work pot lucks. So many people proud of unseasoned food my gawd. I would throw that shit right in the trash where it belongs. There is a reason why spices were so valuable back in the day and now we have regressed to people proudly skipping herbs and spices on their food.

For me it depends on the food and its freshness.

I generally like the taste the essence of foods and usually only add at most a little bit of salt to it.

Like a good steak or really freshly made chicken, too much seasoning overpowers the subtle flavors of the meat and quite frankly a waste in my opinion.

One of the cuisines that I rarely use fresh meat for is Indian due to the prominence of spices. I usually just buy frozen or meats on reduced sale when making a curry.
