Might be easier to find a save game where someone already completed the game. That should give you enough points to activate that during New Game+. Otherwise, pretty much any tutorial on Cheat Engine should be enough, just find out what the current value is in the game, look for it on CE, then keep changing the value in-game and search for the new value, until you have reduced the number of found memory addresses. It's a simple algorithm, really. I must be playing Trails of the Cold Steel wrong because fuck me if it isn't hard. Random field enemies are nearly killing my entire party and literally every battle is a struggle. I'm used to being able to autopilot through most jrpg random battles but I must not be doing something right.

It adds so much personality to all the Class VII members, I have no idea why the devs decided to lock up the best stuff in the series (Character moments and character growth) behind some arbitrary number system. It's insane. Play with infinite and see all of them. It makes the game MUCH better. IMO.

The way I stunned enemies was I made sure they spotted me first and I let them chase me. After a bit, they'll get bored and turn around, and that's when I make a run for it to slash them from behind with Rean. By that point you're more than close enough to run into them before they recover.
