Given the pelicans timeframe Zion and Barrett would still be on rookie scale for another year after that deal expires so you aren't hurting any cap flexibility in terms of adding free agents for contention. Furthermore given how it's far more beneficial to be over the cap and using the Luxury tax line as your cap, Having 40M in trade ballast to get a star via trade or just to acquire assets like extra picks is a useful asset to have. Paul is no doubt declining and on one of the worst contracts in the NBA but he will still be a capable veteran backup at the end of his deal.
Plus his reputation is better then that of his actual production and he should get you a better package in return at next years Draft then one that includes holiday.
Edit. Plus don't act like CP3, Zion, RJ, Knox and a non rookie mobile stretch 5 for floor spacing wouldn't be really fun

If David Griffin trades Anthony Davis and Jrue Holiday for one of the worst contracts in basketball, the worst player in the NBA last year, and the only guy in college basketball that could slow down Zion Williamson (which would be a selling point obviously if he wasn't on the same team) he would be fired on the spot.

Trading Holiday is more complex, since there are many more options. However one thing is certain. Efrid Peyton isn't that good and you don't want him as your starting PG. Especially around wings that can't shoot.
So you want a veteran PG and with CP3 you get 2 years of solid play and leadership before you either become a contender or you trade him for Useful assets.

A Knicks deal would almost certainly depend on whether the Celtics (who still have the best theoretical package) don't get involved, whether the Lakers are frozen out or get cute, and how many future picks the Knicks are willing to attach to the 3rd pick and Mitchell Robinson.
No one is trading useful assets for a 36 year old Chris Paul making 44 million US dollars. Trading a valuable asset for Chris Paul's contract, unless you are getting all the 1sts Morey can offer, would be the single dumbest move the Pelicans can make right now. Like, did you not pay attention to how the Pelicans botched the Anthony Davis era?
