So far I only found one scape where you can do that. (this one)
If you bring the car as close as possible to the camera (and rotate it with R2) it will clip through it. This works best on the Nissan R32, Toyota 2000GT and SF-R but on most of the other cars I tried the seats or something else was blocking the view of the cockpit. (I haven't tried many cars tho)
