Pretty much, and you can tell this post is authentic because of how it starts with deadass. I can practically smell the timberlands leather!

For example this place in UW side has these massive slices that are like a couple bucks but one slice was like a 12" pizza and took up an entire cafeteria tray. Koronet it's called. Fucking incredible. But I really only went there because I was staying in the UW side. Having post-Comedy Cellar pizza at the joint right on the corner where the intro to Louie was shot. It hits the spot perfectly. Pizza is convenience food there, it's like finding a mushroom in Super Mario Bros. Just remember to get some, somewhere, and you'll be fine.

People making tourist traps out of these little pizza joints are leading you astray.

Wholeheartedly disagree on Koronet, their pizza is entirely too mediocre for how absurdly large it is. I have a Koronet right around the corner from my apartment but I'll walk 4 or 5 blocks to another place because it's such an improvement--

It's Joes from a local whos lived in NY his entire 25 years of existence I have to say Joes.

But Vinnys in brooklyn is amazing also, my brothers best friend worked there for like 7 years and still does from time to time, they are awesome and really creative guys.

I'm a line cook/chef de partie and I have consumed and even made several times bitter chocolate demiglace for a beef steak, but even I draw the line at some things. Pineapple and ONION? ONION?! This is some fresh hell I was not prepared for.

Closest would be Nathans over on Coney Island, but lets be real, its nothing special. Hot Dogs aren't exactly our forte.

That's the thing. I don't mind onion on pizza, I love it. Caramelized? Even better. But it needs the right amount of contrasting savory flavors because sometimes the sauce can have a tinge of sweetness to it as well. Pizza shouldn't have an overbearing sweetness to it. Onion and pineapple jumps overbearing and heads straight to overkill.

Get a slice and then....

Exactly! Although I'm fine with a street vendor italian ice, a slice from your local store and a cup of Marinos is the right amount of comfort food.

Joe's Carmine is probably the most solid NY style slice in Manhattan (needs some salt / parm tho) as they do many things right

There's better NY style slices outside of Manhattan

Louie & Ernie's in the Bronx is my number 1, and it's not even close

I grew up on Luigi's in Sunset Park, and when it's the owner making it it's still pretty awesome

Di Fara's is too risky, I've had way more off pies from there than good ones, and that makes it definitely not worth the wait. Other places like Julianas, Totonnos, and places of that ilk fall slightly out of the definition of NY style slice

Throw some garlic powder on and you'll be fine. Give it a shot. Pizza sauce shouldn't be overly sweet. It should have some sugar in it when you make (I've made it at multiple places) but it should not be something immediately noticeable.

I haven't lived in NYC for a while, but I still remember Ray's. That's a damn good slice of pizza. Hot as hell if you choose to eat it inside the restaurant though.

I was also a fan of this little tiny pizzeria under the 36th Ave train station in Astoria. Can't remember what it's called anymore but those guys always gave me free shit when I ate there.

Beyond fermenting the dough at 40 degrees for 72 hours, what else is there? I thought NY style once in the oven cooks in 8 minutes because you put it near the top of the oven. If you've got a kitchen you just dedicate space for it and it's not an issue.

I'm not saying it should be sweet, just that if you have the right taste buds it can be noticed. I mean, tomato by default has enough acidity to it that you can feel it in your cheeks(I have no idea how to explain this in English), so if that sense lessens then you can notice the sugar content of a sauce.

Every place I've worked at hand stretches it and makes sure flour is on the bottom when placing it in the oven. I've never worked at a place that uses a roller or machine roller for thin crust. Nothing really ceremonial about it. You don't have to toss it in the air if that's what you're getting at.
