It's undeniable that the visuals are gorgeous and I don't wish they were different, but I wonder how it would've looked if they'd gone for a cartoony or cel-shaded look.

I would assume Dream Worlds will return. Don't think anything beyond that would be feasible since the game doesn't require an online connection to play.

I hope it stays like New Leaf in that only specific features require an internet connection. I do most of my Switch gaming on a bus with very crappy, unreliable WiFi.
I am definitely hoping so! I feel like I have been waitinf for a new Animal Crossing for so long, since before Happy Home Designer (which I liked!) and Amiibo Festival (which I.. liked parts of). No, because the rate of which they release news about this game is worse than drip-feeding. And the game is supposed to launch in 35 days, that is starting to worry me a lot.
