Yeah you are right, I hope this doesn't turn out to be indie-vapoware like Cube World did for example! I loved that movie by the way, watched it three times already.
I can't believe no one mentioned Tropico: it fits perfectly OP's description.
I haven't played Tropico 6 which adds archipelago and online multiplayer, seems fine, my personal favourite is still Tropico 4 (you can get it for very cheap with all the DLCs during sales) even though it has a more colorful style than other entries. Tropico 3 is also fine, a bit more rudimentary, while 5 was a bit criticized for dumbing down some Tropico 4 features.
Honorable mention for the music that also adds a lot to those tropical / caribbean vibes

I love playing in the summer with the doors and windows open and a nice, cool breeze blowing inside. Or just outside on my Switch :)
But that's the only time I really want to play these games :)

I just finished doing all 168 championships in Forza Horizon 2. Such a fantastic highly atmospheric Mediterranean setting.

It's a tactical military shooter but its main map is a Mediterranean resort island (if you play Assassin's Creed Odyssey, it's based on Lemnos).
The game's other main map from the expansion pack is a Southeast Asia-themed archipelago which has a tropical, similarly sunny theme to it. It actually reminds me of Crysis 1 and Ghost Recon Island Thunder.
