They all switch up what cuts of meat they are carrying at certain points - you can just ask any of them for a specific cut you are looking for.
Some of the waiters may have a couple of different cuts and there are generally several of them roaming about so there could be more than one filet guy.

This is good advice if you want to avoid awkward staring contests with the waiter.edit: also they will usually cut most of your meat off, then you are supposed to grab the almost cut-off meat with your tongs, and then they will finish cutting the meat.

Also, fraldinha is usually less fat than picanha, but do yourself a favor and save space for both.Dont fill up yourself with rice/salad/french fries. Each waiter brings a different meat. Dont ever get more than 2 pieces of meat at the same time, wait till you finish at least one of them before getting another one. If you like one particular meat you can tell a waiter and he will ask someone to bring that one for you.
Aside from the meat I recommend getting pineapple and fried banana (only one otherwise you will be full too quick). Beans and vinagrette are great as well. Not sure but there will probably have some Farofa and fried Mandioca.
Fogo is pretty nice. The fried bananas are delicious, and the cheese rolls are really good as well. Find out what meats they have on rotation, and if one you like or want to try isn't making the rounds near you, ask for it. Check out the salad bar, but don't fill up on it.
There isn't really a dress code since I've seen people there in shorts and short sleeves, but I usually wear something business casual at most.
Clothes are very important. Don't forget those. You have to have a shirt and shoes though. Pants not required.
