No one mentioned Hajime No Ippo yet, those fight scenes are amazing, granted there are repetition, but the drawing is amazing, same with the music. It really pumped you up

Bit of an alternative to the very fun, expertly choreographed and highly stylized anime that dominates this conversation. I submit the climactic duel between Justin and Jenner from the Secret of Nimh.

I have always loved this sequence. First, I think it's really beautifully animated. Don Bluth's cartoon characters are just constantly moving. They breath, they bounce on the balls of their feet, their faces contort, all 24 frames per second have something happening. Not to start the whole 2D vs 3D thing, but to me that's something we lost in the transition. These mice exude an energy only possible with ink and paint.

The choreography and framing is clearly inspired by swashbuckling movies from the black and white era. You can feel how the animators were channeling Robin Hood and The Sheriff of Nottingham fencing their way up a spiral staircase. The fight gets dirty, not just because it's on a muddy rock, but because the choreography trends towards realism over fantasy. They fight like real guys would fight, clinching up, kicking out of desperation, getting visibly exhausted relatively quickly.

There's also solid storytelling. Each of the character's personalities is demonstrated by their action. Jenner is cruel, and he is greedy, and he's a sneak. Justin is brave and forthright and maybe a little too trusting. There's even a little poetry. Jenner the great betrayer ultimately falls after being stabbed in the back.

Also, the guy doing Jenner's VO is doing WORK.

For sword fights, this one from Garo is among the top for me.

For something obscure (and also not anime depending on who you ask since it's Chinese), I enjoyed the fights in King's Avatar. Most of them are admittedly pretty rough around the edges and way too prone to overusing special effects and shaky camera, but it has some cool cuts involving its only fist-fighting focused character (1, 2, 3)
I agree the frenetic kinetic energy of the animation and momentum of the fight even manages to elicit winces from me really made it it stick. Really an A+ effort.

Though rotoscope is used in anime in some rare instances, I'm struggling think of any hand to hand scenes that are the case. References might be used in some cases of course.
I may be overestimating how prevalent it was. Can't find it now, but I recall seeing how at least some of Spike's fights from Cowboy Bebop included shots straight out of Bruce Lee movies.

They may have been inspired by Hong Kong action movies but there is no rotoscoping in Bebop. Not to mention Spike is suppose to be using Jeet Kune Do.

sword of the stranger is probably the best animated fight scenes ever. For pure animation, redline is also Fucking nuts.
