As mentioned above, Sega's arcade output was amazing, and so was Namco's in the 90s for 3D.

R-Type Delta on PS1, another 2.5D shooter, with chunky looking, yet appealing graphics:
Necronomicon on Saturn, a pinball game making good use of fixed camera and hi-res:
