If it's on track then it's 2021. Sticking with that for now, though naturally nothing is ever certain these days
considering that aside from console launch years, Sony seems allergic to launching any 1st party games after like August, I'm gonna guess Feb/March 2022 myself.
I think it could go either way. I think they want to hit 2021, but may not be able to and might slip into early 2022. The lack of date was pretty odd. Could just be saving it for the summer show I guess, but it kind of feels like a weird move to have this at all if you already have a date in mind.

Going by the recent interview that the game is still on track for 2021, i vote for 2021.

The lack of announcement says to me they're still aiming for this year, but it's not locked down yet.
If they knew for sure they could hit 2021, this would have been the perfect time to at least drop "2021" at the end of the trailer. If they knew for sure they couldn't hit 2021, then they could temper expectations by dropping a "2022" at the end.

it's coming 2021; as I said in the SoP thread I'm sure they'll reveal more of the game with a release date at Sony's summer conference.
I am guessing they are going to announce at the Summer Games Event and yeah gonna go like October or something.

I'm team 2021 only cause I can't think of what else Sony has as their heavy hitter for the second half of this year.
This year, them saying it's on track when they previously said 2021 tells me that, also will probably get a release date soon during Sony's show.
Honestly, Sony's strategy always feels like it's been that they don't need heavy hitters in the second half of the year, since they lean heavily on the 3rd party marketing deals and the like. the PS4 gen felt like it was one that was defined by all their 1st party stuff launching in the first half of the year.
Especially with the likes of Kena, Deathloop and what looks to be a Far Cry 6 marketing deal (based off yesterday's info), alongside the usual Call of Duty marketing deal they don't need a fall heavy hitter.
edit: probably don't need a heavy hitter if they see a reason to delay, but nvm. seems they've released more fall titles than I remember.
