I think Ellie's face looks a bit off in The Last of Us Remastered cover art

I can't pinpoint why, but she looks almost like a different person in the PS4 version.

the lighting makes everything look more defined in the PS4 version and her chin looks a lot sharper//eyes are looking direct instead of past

I think it's just the lighting differences playing with your perception. They both clearly look like Ellie.
