Why would Bolton be a house over Tyrell, Arryn, Greyjoy and even Tully? I'd choose the Greyjoys personally.

Kinda, yeah. There's a lot of stuff to work with if you're clever. Dothraki are largely mounted forces, Unsullied are spearmen, northern fighters will be used to colder climates, while fighters from the south will be accustomed to heat. Things like that.

So Total War: A Tale Of Fire And Ice - Game Of Thrones Part 1 or w/e is slightly more likely than impossible. How about nigh impossible.
