EDIT: Found it thanks to Dancrane212 it was Autumn's Chorus:

Hi everyone !

I just remembered an indie jrpg that I saw not too long ago. It was supposed to be a sort of JRPG with beautiful pre-rendered backgrounds and visuals. It looked a little bit like clay or slow motion ? Might be wrong on the last bit. Does it ring a bell for anyone ?

Also, it's not Legrand Legacy.

Thanks for the help !

99.9% sure it's not what you're referring to, but Sakaguchi's new game is using photographs of built models and stuff as the backgrounds:

Hopefully after the endless stride of 2d metroidvania and roguelike we have these days, fixed camera and pre rendered backgrounds become a thing. Remake looks good to this day, shame Capcom lost the high res backgrounds.
