There are ranks in the mon hun series, like for an example, rank 3 rathalos fight will give certain parts for a rank 3 armor, rank 8 rathalos will give parts for a rank 8 armor while generally being a harder fight due to multiple things (let it be multiple monsters, terrain, etc) so if you look at Ranks as difficulty, yes there are harder missions, but you have to advance in ranks to get it. (you do not have them all unlocked from the get go. )

There are multiple monsters roaming any map. The tougher monsters will drop better materials generally speaking. Your mission might be monster A but if you hunt monster B you'll get carves from it. On top of that there is Low and High rank quests with High rank being many of the same monsters except beefed up.

Basically the loop is:

1. Take mission, usually to hunt a certain monster but there are other mission types
2. Prepare by setting up equipment, food buffs, etc
3. Head out on 50 minute mission. Once loaded in, you can do whatever you want, but to get the final mission rewards you have to do the mission.
4. Mission complete, head back to town to rest, build/upgrade equipment

Alternatively you can free hunt with no time limit and encounter any monster from that area, but there just won't be end of mission rewards and you won't advance the story.

Bottom line, anything you can imagine wanting to do, you can do. Want to explore for hours? You can. Want to fish for hours? You can. Want to team up? You can. want to play solo? you can
