Are there any meaningful bug fixes or changes that I would miss in playing the day one version?
Camera and control improvements. I think they also reduced that bug that keeps showing you the control tutorial even late on the game.

Ueda doesn't work for them, his company genDESIGN made the game so they'd have to pay them to do it and they're working on a new multiplatform game now.Is there any way to make Sony know? If all they need to do is give an option to uncap the framerate, which should be very easy on their part. This game is even included in the Plus Collection so it's not like they don't care about it.

Can't Japan Studio do it? They were involved with the development of the game and unlocking the frame rate doesn't seem like a change that requires the original team. That one is also baffling. It's probably 100% capable of running at 60 fps if they just unlock the framerate, and From has actually unlocked Dark Souls 3 and Sekiro which obviously run at 60 on ps5 as a result. It's strange that they didn't do the same with Bloodborne. Maybe there are issues there and it would require more than just unlocking the framerate. Even with the latest patch the camera control is bad but on 1.0 you have half of your right stick that doesn't work so yeah, you have to deal with that.
Btw NXGamer , what do you think of a video with unlocked framerate on Pro and Pro with Boost Mode activated?
It would be interesting since I've seen framerate improvements with boost mode and even moments that are almost full 60fps (around 5:40)
