Take your time. Heavensward is also better than most FFs lolI'm at the very beginning of heavensward, it took me 2 years to fully complete original xiv, hopefully shadowbringers will be worth it.

I felt the same way when I first started. I'd say that as long as you make sure to follow the main story quests and the quests for your class you should be okay. The game is pretty good about providing tutorials for any necessary information and if you do still struggle to understand anything the games community is very helpful and welcoming to new players....I really need to play this game huh.
I picked up the demo about two years on PS4 and dropped it hard because MMO stuff in general just overwhelms me. I went through the tutorials and still had no idea what did what. I've been wanting to try it but the amount of info to take in still dissuades me.

If you're genuinely interested I'd advise sticking with it throughout the free trial period at least. By the end of that period you should be able to get your head wrapped around pretty much everything you'd need to know, without needing to worry about paying for a subscription or whatever.

Can I play FFXIV with a gamepad the way I did for FFXI and not suck? I know I'd have to use the keyboard sometimes but I do NOT want to use a mouse playing it.

All you gotta do is play a few hundred hours and then it gets good!
To be honest it's good from the start. It just has a bit of a dry spell leading up to Heavensward when getting to the post main story quest content of ARR. People say "get to Heavensward" but ARR was always good.
