The background music is set by the game style (SMB, SMB3, etc.) and the theme in a zone (grassland, underground, castle, etc., with a music box variant for the night modes). There are also sound effects items that you can place in your level to create temporary music tracks: boss battles, miniboss battles, bonus areas, or silence, plus some new additions in SMM2 (Super Mario Kart, SM64 Slide, Delfino Plaza, Gusty Garden Galaxy).
If you're particularly crafty, you can use a special variant of jump blocks to create a custom music track, with different item collisions acting as different musical instruments. At the start of SMM1 it was overloaded with auto-play music-only stages, but some people did eventually figure out how to make custom music click with an actual platforming course.
Most likely yes; the original game recieved new content updates, and I would expect the same here.
If you look for codes in the right place you'll find some normal levels. With level tagging also being more of a thing now, you can block out the more gimmicky levels if you want.
You don't neccessarily get a choice. The music track that plays is determined by the Game Style (Super Mario Bros, Super Mario Bros. 3, Super Mario World, New Super Mario Bros. U or Super Mario 3D World), Level Theme (Ground, Underground, Underwater, Castle, etc) or if the stage is using the Night Mode (which will play a music box version of the regular tracks). While some themes reuse music from their original games, others have new compositions (if those level themes weren't in the original games).
There are also a few sound effects you can place in levels that will play music too: a Bonus Room track, a Mini-Boss track, a Final-Boss track and four tracks from past Mario games (Mario Circuit from Super Mario Kart, Slider from Super Mario 64, Delfino Plaza from Super Mario Sunshine and Gusty Garden Galaxy from Super Mario Galaxy). The former three change depending on the theme, but those last four are the same in every theme.
People will definitely find their way to your levels; I played the original game for the first time in ages recently and I had tons of notifications because people played or starred my levels.
They confirmed that Online with Friends will be patched in later though. It might be a bit too soon, but it IS happening at some point.

Still on the fence with this one as I don't have a creative bone in my body / lack the will or confidence to promote my creations and so assume they would never get played. I get the impression there is plenty of content outside the creator, but I feel that I would be "missing out" if I neglect half the game.

It's only in the SMB1 style, yeah (like how the Hammer is only in the 3D World style).
Mii Costumes are the main unlockable in this game (some of them are unlocked through Story Mode too; the two unlockable power-ups come with Mii Costumes based on them, for example).Still sad of no costumes even if only for SOMETHING to unlock by playing online

That would be cool, but a datamine and the fact that nothing else has leaked suggests it's only that one and the hammer in 3DW. I'd be surprised if there wasn't something for the other styles at some point though.So is this new power up only in SMB1?

I can see those coming as short-term updates for sure, something to put out before the first 'major' update(s) I feel.In terms of post-release updates, right now my only prediction (besides online with friends, which is obviously confirmed) is that they'll make the "Escort the Toad" and "Clear with the Stone Block" clear conditions available for people to use in levels. Keeping them as Story Mode exclusive features just defeats the point of it being a tutorial for what we could do with the game's tools.
It'd be cool if they added the blue and yellow Yoshi and baby Yoshi for the SMW and NSMBU themes. Yoshi is vehicle, and you shouldn't personify it.
