I don't know what privilege you are speaking of... I think this is sadistic parenting and genuinely awful. Children deserve space and a sense of security. The "joke" here fundamentally strips that away from them. And for what? The amusement of strangers? That is reprehensible.
As far as it being just a game... none of my criticisms here have anything to do with the game. It is the sense of enfeeblement the parents are inflicting on their children. If they were to rip a book out of their child's hands I would feel the same. As far as the parents not being as bad as parents used to be... that sounds like your own personal biases coming into play. It probably largely depends on the parent. From my experience, many parents seem to be far more restrictive than parents used to be with electronics. That being said, no one should ever be made to feel worthless because of their choice of hobby. That is clearly not acceptable.

Not getting in much deeper than that. Kimmel does this shit all the time, sometimes its funny, the point is to get a laugh, part of the point is to show how spoiled a lot of kids are.
Honestly until you are responsible for shaping little lives you can't ever truly understand. You can comment on how you think people should act in an ideal situation, and most parent's would probably agree, but reality is so far separated from it.
I'm not a fan of when Kimmel does this shit honestly, since a lot of context is usually lost, but I also tend to have no issues with Parent's being a little assholish to their kids at times. Your job isn't to be their friend, and sometimes a little toughness and adversity is good for your kids. Set good rules, stick to them and don't be a hypocrite and generally it never has to get this far. On the flip side as kids get in to their teens they tend to want and need to be treated more like the young adults they are, so you have to hope by then you've shaped them to make the good decision to not play Fortnite for a huge long time.
These kids look like they have their own rooms with a PS4 and a big screen TV, that's sadistic parenting? Surprise, a lot of gamers are assholes. And, I remember seeing a kid yell and hit his mom on the trolley in Philly back in the early 90s. This ain't new. Some parents don't discipline their kids. They see evidence to not spank kids as evidence to not discipline their kids. My 6 year old threw a temper tantrum last night while we were out at dinner. That shit ended real quick with no spanking.
