Fun fact-- From last year, kids complained about the food being too fancy so they added pizza rolls and chicken tenders at a Table Of Shame where it would look really obvious if any adult ever went over to grab anything from it.
Every flashy resort goes out of their way to try to look like this is how it operates. Like this show is going to show the seedy garbage behind the scenes of the hospitality industry.

My young and innocent self in high school failed to appreciate my choir instructor trying to avoid this at a weekend retreat. He set an evening curfew after dinner, no co-ed rooms, followed by surprise evenings events, followed by being woken up before dawn (he literally ran around the hotel and banged the walls) and it screwed with anyone's ability to actually enjoy themselves. Not that I fault him, in hindsight, and it was still a quite lovely experience.

You're right though. A character so sheltered yet singularly focused like Erina where Souma upsets her worldview to that extent ... really shouldn't be able to exist in the world. That why he find out later how important
Hisako's existence is to her.
The epilogue manga does bring up Soma's mom, so maybe the anime will go into it as well during its final season.
