I'd imagine that being undead means that they're easier to take care of. If I forget to feed them for a couple weeks, what, are they going to die on me? And I probably don't have to pick up after them since they have no organs.

As for enemy, I'd have the one you get to capture in Bowser's Kingdom as a pet. Picture of this below.

Considering that both Bowser and Madame Broode are both able to tame them and treat them as loyal pets, Chain Chomps seem like the obvious answer.

Edit: the woodpeckers from Odyssey are so cute i need one, those mummy monsters from the sand kingdom are also cool.

And well a T-Rex is a legit Mario Enemy now lol. Well ok then one more one of those mini-octopusses from the Beach/Seaside Kingdom.

Lakitu would be practical. You can fly wherever you want (unless the time limit exists in the real world!), and I guess it can save you if you drive off the road or something.
