I made shakshuka once, and I would have enjoyed it, but I couldn't stand the eggs. It made me sad because it's such a beautiful dish.

Crazy weekend, with all the entertainment options!

Here's some stuff I've made, along with the recipes:

French Apple Tart:

Deceptively easy but tasty. Cooked this for my birthday party last night to big fan fare.

Recipe/Instructions:

Pie Crust: Just use this: http://www.seriouseats.com/recipes/2011/07/easy-pie-dough-recipe.html
Apples:

-3-4 medium sized apples, sliced as thin as possible. Shape doesn't really matter but I cut the apple in half and then slice them into pieces.
- 1/2 cup sugar
- Cinnamon as desired
- Some extra butter
- Apricot Jam (Optional as topping)
- Brown Sugar

Instructions:

0. Preheat the oven to 400 degrees

1. Make that serious eats dough recipe, and then memorize it for any other butter crust desert you want to make (pies etc.) Seriously, it's failproof. I usually combine the ingredients with my hand and don't wait the full 1 hour so that the dough is firm and it's fine.

2. Cut the apples up, and add the sugar and cinnamon to taste.

3. Spread the dough into a pan lined with parchment paper and arrange the apples as you like. There's no real rule of thumb, but ideally you wanna cover every part of the dough up.

4. Take about 1-2 tablespoons of butter and cut them up into little cubes and toss on top of the apples, spreading evenly. Take some brown sugar and do the same.

5. Toss into the oven for 45-50 minutes, checking occasionally. Near the end of the process, I like to toss some extra cinnamon on top for some color/flavour.

6. Take out of the oven, and spread some apricot (or w.e) jam on top. We served it hot with some vanilla ice cream and it was pretty awesome.

Beef Noodle Soup

Note: This is one of my favorite dishes to make, but the complexity can scale depending on what ingredients you have on hand. I'll try to list ingredients that I consider to be optional as such.

Ingredients:

  • ~2 pounds of beef chuck roast/shank etc. Honestly cut doesn't matter all too much as you're gonna be slow cooking it for a bit.
  • (Optional) Some beef bones for broth
  • ~ 4-5 cloves of garlic, slightly crushed
  • Few slices of ginger
  • (Optional) Dried orange peels
  • Dried chili peppers
  • ~ 1 tsp Fennel
  • ~ 2 tbsp star anise (pieces)
  • (Optional) 1 Bay Leaf
  • 2 tbsp (or more) Doubanjiang
  • Soy sauce
  • Black Pepper
  • (Optional) Soy Paste
  • (Optional) Cooking wine
  • (Optional) Garlic Powder
  • (Optional) Tomato paste (if you want a richer, semi tomato-y broth)

This dish can get really complicated really quickly, but at the very basic you're just stewing some beef with all of the spices and sauces listed above. I don't really do exact ingredients with this one, because a lot of it is going to be off of what you prefer with the broth. For example! I'm a big fan of having the broth be salty but spicy with some herbal flavor. Not as big of fan of spice? Don't as as much doubanjiang etc.

Instructions:

1. Cut up some beef up into chunks

Size and shape depend on your preference. Here's what mine look like:

2. Get your spices ready:

If you put a gun to my head, I would say that the star anise and black pepper are really the only two spices you need.

3. In a big pot, heat up some oil on high and fry up the beef chunks until cooked around. If you want to brown it, make sure the pot is rid of excess moisture. Alternatively, fry it on a frying pan before moving it over to a pan:

If you have beef bones or beef shanks, how you would manage all of these things is to boil the bones/shank in one pot. Fry/brown the beef in another frying pan, and then move all of the ingredients over into the big pot when ready.

4. When beef looks semi-cooked, add in water until the beef is completely covered:

5. Add in your spices and soy sauce/other sauces:

Some people say to put all of the spices into a tea bag or whatever... but I'm lazy and don't think it's entirely necessary.

6. Bring the pot to a boil. When it hits a boil, reduce to low-medium heat and let it simmer for 40+ minutes. Serve with noodles for the quintessential beef noodle soup, or just add to rice or your carb of choice. In a noodle applicatio. you can add some bok choy, tomato slices and cilantro:

Oh shit..... Just found out my friend is getting into the workaholic attitude and the c.r.e.a.m. attitude. The dude is looking to work 4-5 jobs because he thinks money is now everything. He's hard headed, I couldn't get through to him. He also came out to me that he has a coworker that is giving away free drugs i.e., cocaine and weed and that he has been abusing it because it gets him focused and allows him to work more. He also said that alot of the people he works with has been using cocaine to keep up with the work rate (production).

I told him that he should stop or else he'll lose me as a friend. He says he'll stop and that he only uses it once a week... Which is more than enough to get addicted to cocaine. It looked like he took it to heart because he was about to cry when he came out to me about it, but he keeps making up the excuse that both weed and cocaine are helping him focus and to do more work.

Then we also learned that another friend of ours since high school (married right after high school) is addicted to gambling (slots). We went to his house last night for the baby shower and he didn't even show up until 8-9 pm because he was at the casino! He has two boys with one coming next month. His wife has been telling him to stop, his dad found out about it and lectured him for 2 hours, we told him that he needs to stop and that we are here for him. We haven't seen this friend since 2 years ago.

Damn. The things that life can do to people. Things change so fast in such a short amount of time. It's two situations where I question whether they did this to themselves or if life is just shitty to them....

I'm sorry to hear that. I know the pressures that life can get people to do crazy stuff to people. I don't have anybody that's gone through anything similar, but I've had friends who have jumped down the conspiracy theory rabbit hole and it hasn't been pretty.

Yea..... We all have our problems and I've dealt with mines (not fully) because I have family that cares. For him I just wish him the best. The best I can do is be there for him when he needs me (not when he's high though).

The dude was spouting that bullshit about being a entrepreneur and living in mansions and shit kinda like people who get sucked into pyramid scheme and ponzi schemes. I hope he realizes that not everybody is able to live like that and achieve that. The 1% is the 1% for a reason, but I digress..... It's his life and he's hard-headed so anything I say I won't be able to get through to him. Money's not everything.

I think it's one of those things where (as far as I'm aware) he's never had to actually struggle struggle. When they finally hit that wall of struggles? They sort of crash and burn, looking for any way to get away from their struggles or an easy way to fix them of their struggles.

I worked with someone who did coke (and other stuff) in the past. He was a cool person who suffered a lot of personal trauma all at once, and he turned to the nose candy, and it made him a completely different and unbearable person. I ended up helping him get another job so he could leave us alone.

He's clean now, but we don't really talk anymore.

One thing about your friend, though, if he'll still listen to logic: if he's all about money now, one thing to address is that the coke is going to drain the shit out of his finances, as he's going to need to buy more and more to get the same high.

Yeah. He's..... Not the same anymore. Dude can't sit still and can never stop talking. It sucks because I've been trying to stay away from him (personal reasons) and when I finally get back at him? He's this entirely different person. New friends, weird people he's "networking" with, etc.

I know it's not my fault, but it does make me question what would happen if I was there for him more. We don't live too far from each other. I'm always right there if he needs to chat or hangout.

This question popped into my head not too long ago after I wrote my piece on Orientalism as it pertains to the diaspora Jewish experience in Europe and North America. Some of the feedback I received remarked on similarities between the Jewish experience (and the Middle Eastern/West Asian one in general) and that of East Asians, and I started drawing connections from there.

I thought it would be worthwhile to ask.

I wore contact lenses for 10 years and didn't get used to them until a year in. It's so unfair for asian eyes but you'll eventually get used to the process. Recently got lasik and holy shit, what a godsend.

What is the procedure like? I want to get it but the idea of being awake during it is freaking me out.

Some of the feedback I received remarked on similarities between the Jewish experience (and the Middle Eastern/West Asian one in general) and that of East Asians, and I started drawing connections from there.

I cannot speak to everybody's experience, but if I had to generally create an umbrella for an overarching Asian stereotype that transcends the continent I would probably argue that the stereotype that best knits together perceptions of Asians in the United States it would be that of the being somewhat outside of the mainstream. I don't want to be a downer, nor do I want to disparage the very real issues that other cultures face. The problem with this stereotype is that it's too broad to be that useful -- I, could, for example, say the same thing about the Latino side of myself as well in relation to the United States. But I would posit that perhaps there is a difference, even if it is difficult to articulate.

Off the top of my head, I could see all Asians being perceived as cheap, frugal, or chintzy. Obviously I don't think it applies to everyone but I feel like it could be seen that way.

I think those are fine overlaps. I'm hesitant to ascribe any one particular one as definitive, only because Asia is so big, and I don't even pretend that I'm familiar with all of the cultures and subcultues that exist within it.

Went to a birthday dinner for my dad on Monday (his birthday's Halloween but we did the dinner a day early) and went to this really nice seafood place. Ordered a King Albacore roll and some shrimp pasta along with oysters. I was extremely hungry that day for some reason, but it's the first time I've ever ordered sushi along with something else instead of just sushi.
