I'm not sure if we can determine from the currently available information if they removed stat customization options or simplified how players can customize their Pokemon.

I'm going to assume not, seeing as the game will have different stat systems and level up mechanics. Gen 8 next year will most likely be when you can bring over all your old mons to the new system.
Yep, these ones look so bland. I don't like this art style at all.I dislike the visual style they chose coming off of Sun and Moon. The Chibi artstyle just feels wrong to me after seeing the more realistically proportioned models in Sun and Moon (Its kinda like going back to X/Y's visual style). Another visual element that really bothers me is how retangular everything looks. I understand that they're using an older, grid-based region (Kanto), but seeing all these hard squares and rectangles just makes the place feel artificial. One thing I really remember and enjoy about Sun/Moon is its rough looking route design. Alola's routes very rarely had such hard edges; they were usually fairly rough and asymmetric looking, which made Alola really feel like a new, unexplored place.
Basically, going off what we see in the trailer, the Let's Go games look a lot cleaner and sharper than Sun/Moon, but the chibi style combined with the geometric visual design makes me prefer Sun/Moon's visuals, even though they are messier and have a lower resolution. I'll keep checking the previews as the release approaches to see if the visuals evolve/change with other areas, but this is what I'm thinking right now.

It's the latter.Have they confirmed it's only the original 151 + new one (and some alola forms)? Or is it specifically Kanto only and could therefore have ones that belong in Kanto like Munchlax, Elekid, Slowking, Kingdra, Pichu, Golbat, etc

It's not really about whether it's fun or not, at least not for me, not directly anyway. It's about whittling down a Pokémon's health being a fundamental mechanic of catching Pokémon, one that makes them much more likely to catch and that much less based on RNG. Of course, it's still based on luck at the end of the day. But if you get a Pokémon into critical health and then put it to Sleep or something, it's almost a sure-deal you'll catch it (at least with most non-Legendary/Pseudo-Legendary Pokémon anyway).Because it was never fun to whittle down a wild Pokemon's HP or use status effects for those that run away.

Just look at it from the other side: if Nintendo and TPCi weren't aware of the shit show these games are, they wouldn't have done the pre-emptive damage control of saying that the actual new Pokémon games come next year.
