Yes, they are always Mewtwos. You might want to see if there is a group being coordinated on your community's Facebook, Discord, whatever.
I'm just about to hit level 7 - any hits / tips other than just hack every portal / link them if you can and if they are the other side take them down ?
Yes, Mewtwo is currently the only EX Raid boss. What generally happens varies on how players in your location play, but around here everyone shows up at least 5-10 minutes prior to the start time to plan out teams and just go in as soon as possible. It usually works out because of how far in advance the invites are distributed.
But yes, if you have any local Discord, Facebook groups, or whatnot, see how they plan for these in your area first.

how difficult is mewtwo to catch? I tried for regice and wasn't able to catch it.

Mewtwo's base catch rate has been observed to be higher than those of other legendary Pokemon. It's high enough that I'm currently 14 for 14 on catching it, though a lot of that depends on optimized throwing strategy; I know several people with less than optimal throwing strategy/ability who have unfortunately let Mewtwo go as a result. I would suggest checking out a tutorial for the Mewtwo catch on YouTube, as I'm sure there's plenty. While you can't really feel out the distance you need to throw without practical experience, there is a peculiarity with the length of Mewtwo's attack animation that you should be aware of.

Basically that. Make sure to play every day. For lv 10 you will need 4 million AP & 2 Gold medals + 4 or so Silver. The Silver will be easy (A Gold medal btw counts as a Silver too).
The easiest Golds for me were Recharger, which I'm already close to Platinum for. And the Soyourner (Hack in 24 hours) which you just need to keep up a streak. How close are you on either of those? Basically will take you min 60 days playing straight to reach lv 10, it took me 72. The last 4 weeks, I grinded like hell. Gained 1.6 million AP. Grinded so much, my neck hurts a good bit from staring at my phone. Thank god I can take a little break and play more casually now lol.
The biggest way I found to gain mass AP is find big area with lots of portals. It being the opposite team will help you out greatly. But even if not, capturing portals and adding links everywhere will help a lot. I prob took over 2 different areas yesterday morning that only had about 7 (neutral) and like 9 (enemy) portals each to area. After all the fields, I gained about 80k. Fields help a lot.
Use the Ingress map to look for big cluster of portals.

Sounds a lot - I'm basically playing every day but more that I'm playing pokemon and will fire up Ingress to take down the portal after I've taken out a gym or if I'm spinning an area with a lot of stops
I have been playing every day so I can tell you I started 46 days ago
Sojourner silver (46) so another 14 days to get the gold medal for that
Recharger 249,160 so thats 1/4 of the way to silver
The only other one i seem to be closer to is connector (258 of 1000 for the silver)
The walker one may be easy to do because i already walk a lot for Pogo but at that time my phone will be on Pokemon :-)
And for removing a portal someone did that to one of our local gyms , it was at a supermarket restaurant and the actual portal was a wooden statue of the Giraffe outside
The statue was removed and the restaurant rebranded - about a month later the Gym vanished from the game - so I have it as a silver badge that i can never get to gold :-(
We do have a lot of other gyms in town now but at the time there was maybe only 15 or so , losing one of those was painful
is boosted Roselia/Shiny Roselia still going on? Seeing a bunch of Roselia around, but I still haven't gotten a shiny one yet.

Does anyone know if receiving a dragon type in a trade counts for the catch a dragon research tasks?
I know trades of tiny ratata and large magikarp count towards their respective badges.

Remember lucky eggs last an hour so just go do an hours worth of catches or if you have banked quest rewards pop a lucky egg on and do those
So raids would be by far the best way to do this right? With a lucky egg active, you'd get ~120,000 exp from ~120 evolutions, but you'd get at least 120,000 from 3 legendary raids (probably more from doing catches/evolutions in between and the strong possibility of doing more than 3 raids within an hour). I think I'll just hold out for Articuno day for that reason.
I just saw somewhere recently that someone caught a shiny Swablu. What shinies still exist rn to catch? I remember shiny Swablu being made available a while ago, but I would have thought it would have been confined to its time period.
There is no shiny that has been removed from the game once introduced. Even the legendary raid bosses continue to have shiny chances if they happen to appear again, as the oops Lugia demonstrated. The arrival of a shiny is sometimes (but not always) heralded by the particular Pokemon spawning in increased numbers and possibly having the shiny rate temporarily boosted, but shiny chances so far are not confined to any time period.
Pretty much all of the pokemon that have had their shiny events in the past can still be caught as shiny even today. The rate for them is the standard (low) chance though instead of the boosted community/event day rates though obviously. Some of the pokemon are pretty rare to see at all in the wild, but every one that you do see that has had a shiny form at any point in time still has a chance of being shiny when you go to the catch screen. The only ones that are unobtainable right now that have been released are Ho-oh and Lugia which were from legendary raids with a shiny chance for a month each.
I haven't even gotten a shiny Shellder encounter in over 200 shiny-eligible encounters. lol
Correct me if I'm wrong, but the only boosted rates were for community days, certain raids, and the Roselia thing, right? Normal events, like the water event don't have increased odds, they just have a lot more of them spawning.
I think they have tweaked the timings part of the post i think it said 12:00 till 12:00 and it now says till 11:59 so you can see its the next day - but i'm fine with another 24 hours of Corsola's and more chances of shiny Rosalias
Does anyone have any recommendations for a budget smart phone purely to play Pokemon Go? My cousin want's to play and, ideally, she would be simless and tether to my hotspot. I've seen some recommendations for BLU and there are some phones with 1GB of memory - would that be enough?

So you need at least 2GB to load , and the game does slowly get more demanding over time - I've had a few cheap chinese phones as 'spares' and those worked but you can see the lag when there are a lot of spawns or there is a lot happening on screen.

It works , just not great performance wise - but it does often dip just below the £100 mark
The other suggestion is look at somewhere like Music Magpie who often have discounts and get a second hand 'decent' phone that you can use
Corsola is nice, another regional down. So now out of non-Gen 3 exclusive Pokemon Europe is only missing Tauros and Heracross.
