Though rotoscope is used in anime in some rare instances, I'm struggling think of any hand to hand scenes that are the case. References might be used in some cases of course.A lot of the well animated ones were rotoscoped from movies and such.
I agree the frenetic kinetic energy of the animation and momentum of the fight even manages to elicit winces from me really made it it stick. Really an A+ effort.For sword fights, this one from Garo is among the top for me.
For something obscure (and also not anime depending on who you ask since it's Chinese), I enjoyed the fights in King's Avatar. Most of them are admittedly pretty rough around the edges and way too prone to overusing special effects and shaky camera, but it has some cool cuts involving its only fist-fighting focused character (1, 2, 3)

Man, I feel like these give such a false impression of what Dragon Ball is. These fights are like 1% of the show tbh.Dragon Ball during the World Martial Arts Tournament was usually really cool.
They may have been inspired by Hong Kong action movies but there is no rotoscoping in Bebop. Not to mention Spike is suppose to be using Jeet Kune Do.I may be overestimating how prevalent it was.
