I agree on the last part.

I think great waffles are better than pancakes, but it's easier to get decent pancakes vs waffles that are harder to do well.

I've had some sad pancakes too. I'm convinced most of the dinners in NYC just reheat their pancakes and waffles, and the result is not very good. :(

My bestie makes waffles on her now-deceased mom's waffle iron. It's 65 years old and still works beautifully.
