Yeah, I haven't thought about it as much as your rules, but I try to alternate between sizes and grunts/gundams/other types.I try to not do similar builds in a row. With time this has evolved in a self-imposed "variety" rule that is based on the absolutely arbitrary criterion of head sensor and it follows this sequence:
As any self-imposed rule it serves no actual purpose but it improves build variety and reduces choice paralysis when deciding what to build from the backlog.
- GM-like. The sensors are covered by a visor. Nemo and Jegan fit in this category.
- Zaku-like. The sensor is a mono-eye. The O and Sazabi fit in this category.
- Gundam-like. The sensors are a pair of well defined eyes. Zeta and Nu fit in this category.
- Others. The sensors don't look like any of the earlier rules. Kits that fit this category will often not be gunpla like Valvrave or Virtual On kits but there are some that are gunpla like the Zedas from AGE or the Gaeon from Reconguista.
I will also try to not repeat sizes, often alternating between 1/144 and 1/100 but this I take way less strictly.

Yeah, there are some modern HGs that are fantastic too though, like most "Gundam The Origin" kits. I think some people prefer the HG The Origin Zaku 2 to the RG Zaku, for example.Wow, that looks a lot better than HGs.
Personally they'd be too small for my tasze, I like the 1/100 scale. But good to know that the lower scales are getting so good. :D
There are a few MG that are relatively small like Victory and F91 if you are ever curious about what the grade has to offer.I haven't gotten any 1/100 yet, but I'm pretty sure I prefer the 1/144. I don't have that much space around, so that's an added bonus.

What is the suggested order for Assembly, Panel Lining, and Matte Top Coat for Gunpla? Right now I have 3 fully assembled Gunpla. I'm planning on learning how to panel line those models, plus future ones, and I'm also interested in Matte Top Coats. From my understanding, both are very simple and relatively easy things to do that really make the models look so much better. I want to know if I should assemble, then panel line, then top coat, or assemble, then top coat, then panel line?
Also, are there any documents or maybe videos recommending how to do Top Coat? I just want to make certain I'm doing it correctly before I mess something up.

Not for the Action Base 5, as far as I know, which is the one I was thinking of getting. I think I'd prefer them to be of the same type, since they'll be one next to the other.
It's hard to say. I bought both black and clear action base 5 while in Japan and for some kits where the connector is included and grey I think black looks better. If the included action base 5 connector is better then I imagine clear would be nice. You can either assemble, panel line, topcoat or you can panel line, assemble, top coat. I do the latter since some parts might be hard to reach after assembly.

In IBO there is a thing called a Gundam frame. Supposedly there were 72 of those, based on the demons of the Ars Goetia. Anything that uses that frame is a Gundam in the IBO universe. The only one that is extremely Gundam-like is Barbatos. The rest have varying degrees of Gundamness (this is not a word).

And that's why I said it's more Qubeley than Gundam. Apart from the color scheme both have an insectoid motif.
Next RE/100 kit is the Gun-EZ from Victory.
And, at last, the RG Full Armor Unicorn Gundam.
