I love fighting games like a lot of people, but there's often less attention on some rather than others. The thread title is kind of open to interpretation, so as a rule of thumb, let's say that any series with 3 or more entries including named updates are out.
Gundam Wing: Endless Duel
I've heard it called the best original fighting game on the SNES, and I've heard it called the closest thing that the SNES has to Darkstalkers or the Versus series. Despite the characters being robots, the game is fast at highly mobile, with super jumps and dashes. It offers super and EX attacks, and as a unique feature, all characters except for the final boss can fire a vulcan when the opponent is at a certain distance, a weak projectile which serves more to throw the opponent off than as big damage.
Breaker's Revenge
A lot of the characters in Breakers feel like they're very clearly takes on Street Fighter's own, but despite not being an extremely original game, it makes up for it by just being really fun to play. The combos feel comfortably flexible without being overly long. Aside from maybe the trap-based Alsion III, all of the characters feel strong, even the grappler that so many games struggle with.
Godzilla: Kaijuu Daikessen
Unlike the above, I don't feel like this game is really that good, but I want to give it a gold star for trying. It looks great, even featuring some backgrounds that crumble as you fight on them. Rather than being a straightforward clone of popular fighting games, its mechanics feel like they're selected to mesh well with the Godzilla license. You've got a combined rage/super meter, you can roar to cause stun, and you have a dedicated grapple button with input moves a la Saturday Night Slam Masters II. It also had some extremely unusual characters in the interest of accuracy. Biollante can't jump and is gigantic, but has huge range and tools to draw enemies in; she's arguably game's Zangief. Mothra is tiny and can fly infinitely, and has tools like beam-refracting power. It may not have any gameplay polish whatsoever, but it feels like the developers had some vision of really marrying this genre with the Godzilla franchise.
