Girl I once knew taught Chow Yun Fat how to ride a horse for one of his film roles, said he was one of the nicest people she'd ever met. Everything I've ever heard about him, from everyone, is that he's a proper human being.
Indeed, I think some of it has to do with the entourage these guys have and the fact that Chow Yun Fat doesn't seem to have much of one. The likes of Jackie Chan, Stephen Chow and Andy Lau would have whole crews following them around and living off their wealth. I can't imagine any of them going to the market themselves to get grocery. An entourage probably wouldn't let them give their wealth away either.
Some guys are just nicer than others though, I remember Stephen Chow from his early days as a children's TV presenter, he would shout at kids and make them cry.

Chow Yun Fatt as far as i know, does not own any production company. Thus the lack of a legion of lackeys.
Stephen Chow was like not really a model to imitate. Dude was a less awful version of Hitchcock when it comes to treatment of the actresses he found
