Just checked Amazon UK and Game UK and yup Animal Crossing New Horizons is sold out.

In Germany it's the same picture btw. Amazon Germany says that new stock will arrive on April 9. Otto says available in the next 5-8 days and Saturn in the next 6-7 days.

To be fair when I made that post on Monday plenty of stores still had stock, only Amazon didn't have it. Now places are out of stock

I dont know, Animal Crossing did set record sales for the series for physical copies in the first week, and the download/digital version would still apply (as of choosing between either version) for first week :) I think stock was the main issue, but i didnt check the stock situation last week though (the numbers for 81% drop should be from the previous week only). Animal Crossing fits good as a download version though, since its often played for a long time, i agree (i'm sure that many only play a few games in a period of time as well, and might have a physical copy inserted for a long time without the need to swap it often for another game).

It should be mentioned that digital is included for PS4 while it's not for Switch since Nintendo doesn't share it. Nevertheless it is like you said that Playstation is a VERY strong brand in Italy.
