Probably Spaghetti with my meat sauce. It's relatively simple to make and it's great for large crowds.

Everyone has to arrive at a hotel a full 24 hours prior and eat a full bowl of Fiber One upon arrival.
I only made it a couple of times but empanadas and also tarts, I can make a ham/cheese, tuna and sweet potato/spinach :p
