Tinga is great, but Pastor is still top for me. I don't think anything will dethrone it.Err....no, al pastor is too sweet to be the best. Beef Suadero or Cecina are great, barbacoa de chivo (steamed goat), as is Tinga de Pollo .

I've had some awesome potato tacos, you can do just about anything with the seasoningRecently been digging potato tacos, trying to cut down on meat consumption. You can hit them with a little bit of bacon or another strongly flavored meat, a tiny amount goes a long way. Also easy to convert from vegetarian to vegan.
